BUTCHERING & CUSTOM PROCESSING
Butcher Block 66 is a custom butchering and processing facility. We have two top priorities: protect the welfare of the animal while reducing stress as much as possible, and ensure we follow the highest food safety standards. We offer custom processing which means each package that leaves our door is marked “Not For Sale” and cannot be resold. If you have the whole/half/quarter of your livestock carcass sold on the hoof, you are ok to use custom processing.

GET ON OUR SCHEDULE
What can you expect when working with us? Here's the timeline, from booking your harvest date to picking up your final product:
Call us at 715-344-7622 to start the process
We ask for quantity of livestock you want harvested, age & approximate weight of animals
You will be put on the schedule as soon as we can accommodate you (we are currently booking 8-12 months out)
1-2 weeks before your scheduled butcher date, we contact you to collect Cutting Instructions - these are recorded on a cut sheet that our team uses to ensure you'll love the final product
The week of your butcher date, we contact you to confirm the day/time you plan to drop off your livestock - animals must be dropped off by Wednesday at 5PM of your scheduled butcher week and stay in our pens overnight
About two months after your butcher date, we contact you to coordinate a day/time for product pick up during business hours (payment methods accepted are cash or check)

HOW TO FILL OUT CUT SHEET
When we contact you to collect Cutting Instructions, we ask you a series of questions. Your answers get recorded on a Cut Sheet. This sheet is used by our team to make sure we get you what you want for your final product. Not sure exactly what to expect for filling out that Cut Sheet? Now scheduling butcher dates for Thursdays in 2023 for cows, pigs, and sheep. Please note: we are currently booking 8-12 months out. You are welcome to either fill out the form below, or call the butcher shop directly 715-344-7622 to get on the schedule.
